Display More1) Attack depends on your class and the skills you pick. For example, a Turtle Hermit needs Energy attack as most of his attacks are energy-based, while a fighter might want to foucs on melee or physical attack instead.
2) Defense depends on the enemy you are fighting against. V players, you got to check their class. V mobs you got to see their attacks (energy based or melee based). Crafted armors are among the best options currently because they have high e and m def, in a more balanced fashion than the armor you can drop.
3) So these decisions are not based really on PvP or on PvE, but rather your own class and who you are facing. The best option is:
pick your weapons according your class. Pick a craft armor or have 2 sets of regular armors if you wish that (one with high m def and other with high e def) in order to use one or the other according to the enemy you are facing (in PvP or in PvE, which seem to be your focus).
4) Another thing to take into account right now is that defense calculation is not quite set, so you won't see that much of a difference. However, that will change whenever Daneos works on that. He updates the new fixes and content on the Global Update Thread, so be sure to check it out if you want to know when defense calculation is going to work.
